Three Ingredient Nan Khatai Recipe

Nan khatai is one of the most mouth-watering and tasty cookie recipes in India! And if you thought that you could only get perfect nan khatais in stores, then we’re here to prove you wrong! We have the perfect nan khatai recipe, made with only three ingredients – none of which is baking soda! Trust me, you’ll love making these and seeing how they turn out. Just one thing – you might have to stay away, since you might end up eating it all up, which may not be good for your waistline!

Ingredients:

Method:

1. Sieve the flour two times. In a big vessel mix the ghee and sugar till the sugar is completely dissolved. Please note that you don’t have to mix the mixture till it becomes fluffy, mix it well for just 2-3 minutes and you will the right consistency.

2. Slowly add flour to the ghee-sugar mix and make a dough.

3. Make the pedas. First roll a bit of dough in your hand gently to make a ball and then press it a little firmly, but not so hard that you break it. The peda should look like the image given below

4. While you make more pedas, preheat the oven to 170 degrees. Place the pedas on a baking tray at a little distance from each other as they will rise during baking. You can sprinkle cardamom powder if you like.

5. Bake the cookies at 170 degrees for 20 minutes. If your baking tray is too thin, your cookies might get burnt at the bottom. You can prevent this by placing another tray below. There may be a few cracks on your cookies after they’re baked.

6. Place the baked nan khatais on a wire rack and let them cool to room temperature before serving.

You can try the same recipe with whole wheat flour. Just be sure to add an extra tablespoon of ghee and 1 teaspoon of baking powder to get the required fluffiness and softness. You can also add some ground almonds or Dry Fruits Powder to make it richer and nutritious for kids.
Again please note there are two important things which can make these nan khatais taste like the ones you get in stores:

1. The measurement of ingredients – Please stick to the measurements I’ve mentioned above as I have tried making these nankhatais several times and these measurements will give you that perfect taste.
2. The way you make the roundels – Please ensure the size of each ball is same and you apply the right amount of pressure when rolling it and pressing it.

That’s it – with a little care, you can make perfect nan khatais at home – with just three ingredients!
