Brownies are an instant favorite with kids and adults alike! But if you’d rather not go through the hassle of
baking, try these healthy no bake brownies packed with the goodness of dry fruit! Our no bake brownies are rich , chocolatey and healthy, and are good for kids over 2 years of age. They are also flourless, egg-less, butter-less and super easy to make! With so many healthy ingredients like chia seeds, coconut and muesli, this recipe is an ideal hiding place for the good stuff!
No Bake Brownies with Dry Fruit
Ingredients:
- 2 cups seedless dates, finely chopped
- 1/2 cup muesli
- 1/4 cup desiccated coconut
- 1/4 cup chopped almonds
- 1/4 cup chopped cashew nuts
- 1/4 cup unsweetened cocoa powder
- 1/4 cup homemade chocolate syrup
- 2 -3 tablespoon olive oil / coconut oil
- 2 tablespoon tutti frutti
- 2 tablespoon chia seeds
- 2 tablespoon raisins
- 2 tablespoon pistachios
- 2 tablespoon dried apricot, chopped
Method:
1. Add dates, desiccated coconut, chia seeds, raisins, cocoa powder and half the quantity of all the nuts and dry fruits into a food processor or grinder jar and pulse till well blended.
2. Now add muesli and oil and pulse again.
2. Line a loaf pan with parchment paper. Add the pulsed mix and apply pressure with palms or back of ladle and flatten it.
4. Add the homemade chocolate syrup over it in a uniform layer.
5. Scatter the remaining nuts and dry fruit evenly over the chocolate layer.
6. Keep the loaf pan in a freezer for at least 30 minutes so that it firms up well.
7. Remove the brownie loaf from the pan and cut into desired shapes using a sharp knife. They last well for about a week in the refrigerator.
The homemade chocolate sauce layer is entirely optional and you can skip the nuts too if it may be a choking hazard. The base with dates, coco powder and nuts is naturally sweet, which will appeal to those with a sweet tooth. These no bake brownies with dry fruit are perfect for breakfast or as a snacking option.
