There’s something about cupcakes that makes them so appealing, which explains why it is such a huge business globally!! And kids are not immune to their charm, but as Moms, we know that too many of these little treats can wreak havoc on the body!!
So a better solution is to opt for muffins – you can make them whole grain as well as add fruit or vegetables of your choice. This recipe is one that ticks all the right boxes – it’s whole wheat, has fruit and nut and does not use white sugar. What’s not to like!
Easy Apple Muffins Recipe for Kids
Ingredients:
- Whole wheat flour 3/4 cup
- All purpose flour 3/4 cup
- Baking soda 1/2 tsp
- Baking powder 1 1/2 tsp
- cinnamon powder 1 tsp
- brown Sugar 3/4 cup
- Curd 1/2 cup
- Oil 1/2 cup
- Vanilla essence 1 1/2 tsp
- Grated apple, 1 cup
- Walnuts chopped (optional)
Method:
1. Sift together the flours, baking powder, baking soda and cinnamon powder and keep aside.
2. Mix brown sugar into the curd till completely dissolved. Add the oil and vanilla essence and mix well.
3. Add the wet mixture to the dry flour mixture and stir till just mixed. Add the grated apple and nuts (if using) and mix through with a fork. Don’t stir too much or you’ll end up with tough muffins!
4. Preheat the oven to 180 degrees Celsius. Grease and flour the muffin cups. Divide the batter evenly among the cups, till two-thirds full.
6. Bake for 25 minutes or till done. To check if it’s ready, insert a toothpick into the center of a muffin. If it comes out clean, the muffin is completely cooked. Let cool before serving.
If you haven’t noticed, these muffins are eggless, and a lot easier to make than cupcakes! The cinnamon gives it a lovely aroma and the nuts add a good crunch. If you like, you can substitute the cinnamon with some Dry Fruits Powder for a nuttier taste. These muffins make an ideal travel snack, since they’re wholesome, filling and nutritious.
