Bruschetta Recipe for Kids

Most Indian homes with kids always stock up on bread, milk and eggs, since these are the very least required to satisfy an active child’s hunger pangs! But making sandwiches all the time can get boring, so it’s worth your while to try something different with bread. One such recipe is Bruschetta, which is a starter from Italy. It is basically grilled bread which is rubbed with a mixture of garlic, olive oil and salt and then topped with an assortment of ingredients like tomatoes,vegetables,chicken or cheese.

This is the first time I’ve tried my hand at a Bruschetta recipe and my son was absolutely delighted with the results! Here, I ‘ve used French loaf which I get made on special order from a home baker. This ensures that it has no preservatives or additives, making it safe to be given to my kiddo. You can go the same route or make your own bread at home. If you’re short on time, you can also use whatever bread you can lay your hands on for now.

Bruschetta Recipe for Kids

For the bread base:

1 French loaf (or bread of your choice)
2 tbsp olive oil
Salt to taste
1 tsp black pepper powder
1 tsp mixed herbs

1. Pre heat oven at 180deg Celsius for 5 minutes.
2. Mix olive oil,salt,black pepper powder and herbs.
3. Cut the loaf into slices and brush the slices with the olive oil mix.

4. Grill the slices for 7-10 minutes or till they are crisp.

For the topping:

1 onion finely chopped
1 tomato finely chopped
1/2 cup bell peppers finely chopped
1-2 cloves garlic finely chopped
(You can also add boiled sweet corn, chopped zucchini and brinjal)
Salt to taste
Black pepper powder
1 tsp mixed herbs
1 tbsp olive oil

1. Heat oil and saute garlic and onions.

2. Add the tomatoes and cook. Once done add all the vegetables in turn and cook till a bit soft.

3. Add all the seasoning. You can also add tomato puree if you like.

Assembling the Bruschetta:

1. Spread the topping either directly on top of the grilled bread or with a layer of cheese in between and top with a sprig of coriander or mixed herbs or more grated cheese.

2. Serve on its own or with any dip of your choice.

This is a dish that is very versatile, use it as a TV snack, a starter, a breakfast, an evening snack or lunchbox recipe – just adjust the toppings to make it heavy or light. It’s something that is sure to be loved by kids and adults alike, making it a great pick for parties too!
